There was a small hole in the wall restaurant called Lumbaya, it was in the south side of New Orleans, the non mardi gras side. Lumbaya specialized in anything but. Meaning, they served up lamb and goat, they served up carp, and actually their carp soup isn't half bad. They also served up insect plates and things like that. Basically if you wanted something other than pork, beef, or chicken, Lumbaya was the place for you. It wasn't a cheap place. It cost money to get the meats they prepared. And while some may think goat meat is easy to get it really isn't. They sold ox tail soup and sauteed chicken feet, pigs feet in vinegar and lime. Some call them delicacies but others call it other names.
Point of this story is simple. Not everyone likes the same things. Some people like to try strange and unusual things. We all follow the beat of a different drum.
Me personally, I don't really mind any type of foods, I just don't really want to know what it is or where it came from. Prepare it nice and spicy and I am happy. Because once you know the mystery behind it, you can never go back and unknown it. Do you get my meaning?
Lets talk about Jackson Kent for a moment. Jackson to me is a hamburger type man. Simple yet nice. Thick burger with cheese, pickles onions, ketchup, you get the point. And yea he can get fancy if he chooses, put some Monterrey jack cheese or pepper jack cheese, maybe some once a while he gets creative and puts some Gruyere or smoked Gouda, or maybe go a little international and put some Feta cheese, which I personally like. Ohhh maybe some Burrata, its expensive but damn tasty. But lets face fact, the most Jackson would go for would be swiss cheese.
There are hundreds of cheeses in the world. Cheeses from all over the country and the world. All one has to do is have a little imagination and be willing to try new things. But you would be surprised how many would still just put good ole American cheese. People do like the classics. Heck even nacho cheese goes good on a burger.
But that's what its all about. People are afraid of new things. People fear what they don't know. Which I never understood. Why are you afraid of a weird cheese, so what if it looks weird and smells weird, give it a try. Put some red onion on your burger instead of same ole white onion. How bout some sliced sweet pickles, maybe some jalapenos, some sauteed onions. Green peppers, maybe mix in some Lipton onion soup into the beef. Some mushrooms? There are endless possibilities. Do not be hindered by your own mind, be bold, be daring.
As I enter Lumbaya I am immediately seated. The waiter brings me a menu but I waive it off, I simply say “surprise me”. He nods and smiles and a few minutes later he says the chef will be preparing my meal by the fire grill which is view able to patrons. I say I would love to see that. I get up with my drink in hand and walk over. The chef has a pale slab of meat almost 8 inches long, like a NY strip steak. It has lots of fat on it, which is never a bad thing, most agree that the fattier the meat the juicier and tender it will be. He rubs what I believe is some spicy pepper or paprika, then I see him dab some garlic salt and lots of black pepper, whatever I am eating tonight will be spicy. Just the way I like it.
As he puts the meat on the fire grill you can instantly see it burning up, he keeps turning it over and over frequently and does not let up, this goes on for 20 minutes of so, you can see the dark spices sticking to the meat, and finally he lowers the flame and starts pounding each side, with a meat clever, and I assume its to tenderize it, he throws pinches of salt on the meat and I am already getting hungry, its starting to look good, there is a pot next to him he’s got what looks like asparagus boiling already, soon hes pouring it on a plate and just drowns it in butter which melts pretty quick he dabs some salt and pepper on it and puts some drops of melted cheese as well, soon he drops the very fine cooked meat next to the asparagus, he puts bits of blue cheese on it, giving it some nice contrasting color against the meat. I walk back to my table and soon my plate is in front of me, the waiter smiles and asks if there is anything else I would like, I ask for some bread and it is on my table within 5 minutes and I enjoy my meal not knowing what kind of animal it is,later on I found it was crocodile steak. In New Orleans, I should of guessed haha.
Anyway that's it. Jackson I hope you take my advice, though someone like you I am sure holds fast to his convictions and wont take sill advice from someone like me. Tell me I am wrong?
